Buenos días 

Mi pregunta es la siguiente, tengo que calcular las diferencias entre la jornada real y los excesos que se se realizan tanto ademas como de menos de esta jornada para luego sacar el total del año.

Me gustaría saber como hacerlo. Gracias

@Conrado como te lo ha sugerido @Gerson Pinedalo puedes solucionar, a la rápida y de forma primitiva puedes probar así: 

=SI(F11>G11;(TEXTO(ABS(G11-F11);"-hh:mm:ss"));(G11-F11))
